Grilled chicken patties a la pizzaiola


Want the taste of pizza (but not the added fat or calories) in a healthy grilled chicken burger? Look no further! I modified this recipe from Giada's burgers a la pizzaiola and made it De-Lisha's by using chicken breasts (instead of ground beef), no oil, less cheese, and more vegetables. This versatile dish makes regular appearances during our weekday dinners and receives two thumbs up from the husband and one high-five paw from our dog Leo. 


Ingredients
  • 4 chicken breasts, thawed
  • 1 egg
  •  2 cloves garlic, peeled and smashed
  • 1/2 red onion, diced
  • 1/4 cup (5 or 6) sun-dried tomatoes in oil, drained
  • 1/3 cup fresh basil leaves, packed
  • 1/4 cup grated Parmesan
  • 1/3 cup of grape or cherry tomatoes, diced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon of freshly ground pepper
Directions
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Spray with cooking spray.
  • In a food processor, pulse together thawed chicken breasts until well ground. Add the egg; pulse again.
  • Next, add the garlic, onion, sun-dried tomatoes, basil, cheese, tomatoes, red pepper flakes, salt, and pepper. Process until blended. Transfer the mixture to a large bowl.
  • Form the mixture into 4-inch diameter patties, each about 3/4-inch thick. Grill each side until cooked through, about 5 minutes. Allow to rest for 5 minutes.
  • Serve on top of pasta, in a burger, or with a side of salad, vegetables, and/or rice. Enjoy!
